A CMT-specific ingredient compound for the production of authentic Chorizo sausages without Monosodium Glutamate. The dextrose dosage included in this compound is optimised for chorizos with calibres of around 60. It supports the typical Chorizo taste profile. Furthermore, the compound also includes a booster system, which increases the water transport in the drying process of raw fermented sausages such as Chorizo. It reduces the drying time, provides for an even and consistent drying process, protects against a dryer log surface which can otherwise be an issue – especially with calibres 45 and bigger – and improves the sliceability.
